Broccoli sausage casserole
Ingredients
- 8 medium potatoes sliced
- 3 cup celery in 1” chunks
- 2 medium onions sliced
- 20 oz broccoli
- 2lb italian sausage
- 3tbsp olive oil
- 2tsp salt
- 1/2tsp pepper
- 3 cloves crushed garlic
Instructions
- brown sausage
- place sausage and veggies in 13x9 pan
- toss with oil and spices
- sprinkle top with bread crumbs or parmesan
- cover and bake 90 minutes at 400°
Baked beans
Ingredients
- 1lb navy beans
- 1 large onion chopped
- 1/2 cup brown sugar
- 1 cup molasses
- salt to taste
- 5 garlic cloves chopped
- 1tsp red pepper
- 1tsp paprika
- 1tbsp dry mustard
- 32oz veggie stock
Instructions
- rinse beans and pressure cook for 30 minutes in 2qts water
- let naturally vent and drain the beans
- set instant pot to saute and add onion and spices
- saute for ~5 minutes
- add the garlic and saute another couple minutes
- turn off the instant pot and add the beans and remaining ingredients
- pressure cook for 30 minutes and let vent for another 30
